Mutton Masala
Ingredients:
Mutton - 1/2 kg
Small onion chopped - 250 gms
Ginger crushed - 1 tablespoon
Garlic crushed - 1 tablespoon
Cinnamon sticks - 3-4 (small)
Clove - 2-3
Cardamom - 1
Chilli powder - 1 tablespoon
Corriander powder - 2 tablespoon
Turmeric powder -1 teaspoon
Pepper powder - 2 teaspoon
Salt to taste
For seasoning :
Oil - 2 tablespoon
Jeera - 1/2 teaspoon
Saunf / Perum jeerakam - 1/2 teaspoon
Dry chillies - 2-3
Curry leaves - 1-2 steam
Corriander - for garnishing
Cooking method :
Cut mutton into small pieces and after cleaning put the meat into pressure cooker with 1/2 tablespoon chilli powder,1/2 teaspoon turmeric powder and the whole masalas with salt and cook for 4-5 whistles( meat to be cooked according to the tenderness)
In a pan / clay pot add oil, jeera, saunf and dry chilli for tempering then add chopped small onions ginger,garlic and curry leaves. Fry onions till transparent then add the cooked mutton into the pan. Once it starts boiling add all the balance chilli powder,turmeric, corriander powder and pepper powder and cook until the gravy is thick. Finally garnish with corriander leaves.
It's outstanding taste can be enjoyed with plain rice/dosa or chappathi.
Note : Cooking in clay pot instead of pan enhance the taste of the dishes.
I use clay pot for cooking especially non veg.
